Executive Sous Chef Debajyoti Pal Roy at The Leela Ambience Gurugram is second in command. And, rightly so. He has worked for several five star properties across national geographies such as Taj Hotels, Resorts and Palaces, Westin Hotels and Resorts, Grand Hyatt and earned over 13 years of experience in the food industry.
I have known Deb for a few years now but met him only couple of times during my Goafest visits at The Grand Hyatt, Bambolim. Now that he has moved to New Delhi and settled at The Leela Ambience, Gurugram, in this video, Deb tells me about his role at the five-star hotel, how is a normal day designed for a chef in the kitchen and how he handles a team of 130 chefs.
